Competition Category Schedule

11th & 12th April 2018

CATEGORY 1

Traditional Pork Sausage

Our Traditional Pork Sausage Category is deemed: use of Irish / N.Irish Pork with basic seasoning only i.e. without flavourings and no additions such as fruit, chili, black pudding, etc the sausages may be presented using natural or synthetic sausage casings

Note: Competitors must supply 4 Sausages in the Raw State and 4 Fully Cooked Sausages.

CATEGORY 2

Traditional Beef Sausage

Our Traditional Beef Sausage Category is deemed: use of Irish / N.Irish Beef with basic seasoning only i.e. without flavourings and no additions such as fruit, chili, black pudding, etc the sausages may be presented using natural or synthetic sausage casings

Note: Competitors must supply 4 Sausages in the Raw State and 4 Fully Cooked Sausages.

CATEGORY 3

Speciality Sausage

Our Speciality Sausage Category is deemed: use of any Irish / N. Irish Pork, Lamb, Beef, Poultry or Game with the addition of any other ingredients considered appropriate by the contestant. The sausages may be presented using natural or synthetic sausage casings.

Note: Competitors must supply 4 Sausages in the Raw State and 4 Fully Cooked Sausages. The name of the sausage must be declared on your entry.

CATEGORY 4

Black Pudding

Our Puddings are deemed: use of Irish / N. Irish Lamb, Pork and or Beef Products made into a traditional style pudding with the addition of any other ingredients considered appropriate by the contestant. The pudding may be presented using natural or synthetic casings

Note: Competitors must supply 6 slices of pudding in Raw state and 6 slices fully cooked.

CATEGORY 5

White Pudding

Our Puddings are deemed: use of Irish / N. Irish Lamb, Pork and or Beef Products made into a traditional style pudding with the addition of any other ingredients considered appropriate by the contestant. The pudding may be presented using natural or synthetic casings

Note: One Pudding is required for judging

CATEGORY 6

Traditional Butchers Vegetable Roll

Our Traditional Vegetable Roll Category is deemed: use of Irish / N.Irish Ground Beef, Pork, Poultry or Lamb with the addition of any other ingredients, seasoning or vegetables that deem this product “Traditional Butchers Vegetable Roll”

Note: Competitors must supply 6 sausage rolls raw state sand 6 fully cooked.

CATEGORY 7

Sausage Rolls

Our Sausage Roll Category is deemed: use of Irish / N.Irish Ground Beef, Pork, chicken or Lamb with the addition of any other ingredients considered appropriate by the contestant with a pastry finish.

Note: Competitors must supply 6 sausage rolls in raw state and 6 fully cooked.

CATEGORY 8

Butchers Choice

Butchers Choice Category is deemed: any minced or chopped product: using Irish / N. Irish Lamb, Pork, Poultry and or Beef Products made into a butcher product with the addition of any other ingredients considered appropriate by the contestant.

Note: Competitors must supply product in raw state and fully cooked.

CATEGORY 9

Continental Style Sausage

Our Continental Style Sausage Category is deemed: use of any Irish / N.Irish Beef, Lamb, Pork, Poultry or Game with the addition of any other ingredients considered appropriate by the contestant. The sausages may be presented using natural or synthetic sausage casings

Note: Competitors must supply 4 Sausages in the Raw State and 4 Fully Cooked Sausages. The name of the sausage must be named on your entry.

Integrity of all work will be judged as seen on the day.  Ensure your entries are labelled with your competitor numbers and products are well labelled with the product names.

Ensure that your products on delivery match the categories you have entered on your entry forms.  Administration at competitions are very important.

Please Note Deliveries to BES HQ will only be accepted on Monday 9th April between 9am-5pm.
