Food NI are delighted to announce that Ireland’s 1st International KCBS BBQ Competition is being held at Dalriada Festival in Glenarm Estate on 13th and 14th July 2019.
Teams will compete in several categories. Sunday, the main competition day, will focus on cooking chicken, pork ribs, pork shoulder and brisket. Saturday will see the teams cooking steak, lamb and salmon. The ingredients will be Northern Irish and each team will be presented with an identical basket of ingredients to work with. Pre-prepared sauces and ready-made marinades are not allowed, but teams are allowed to bring their own herbs and spices.
Entries for this are now open and the cost per team is £100+VAT. This will include – 3mx3m space, electricity and water supply.
Become a Kansas City BBQ Judge
The KCBS team will demonstrate the cooking process for all the meats to be cooked in the Celtic Smoke BBQ competition and describe in depth the necessary flavour profiles and the textures they are looking for at competition level.
Once the course is completed, you will become a registered KCBS judge and have the opportunity to judge in any KCBS competition around the world, for a full year. The course will run from 12th – 13th July at Glenarm Estate. For more information Click Here!
Backyard Cookery Class
Do you love BBQ food and are keen to learn some of the trade secrets? We are hosting BBQ cookery classes on 11th July with Kansas City BBQ Society. This is an amazing opportunity to learn from the Kings (and queens!) of BBQ.
They will explain everything from what charcoal to use for different cooking techniques, temperate control, holding areas on the grill and how to achieve the perfect steak!
